Pan Roasted Ribeye with Stir Fry Bell Peppers and Onions over Rice

I’ve been making a variation of this since my days in college. Its super easy to make and is a favorite in our household.

Ingredients
  1. 2 12oz Ribeye Steaks
  2. 2-3 Bell Peppers (any color will do)
  3. 2 Sweet Yellow Onions
  4. 1 Tbsp Worcestershire Sauce
  5. 2 Tbsp Vegetable Oil
  6. 2 Tbsp Butter
  7. 2 Cups Rice
  8. 4 1/2 Cups Water
  9. 1 Tbsp Coffee Grounds
Instructions
  1. Preheat oven to 400ºF.
  2. Prepare rice by combining the rice and water in a pot. Cover and bring to a boil. Reduce to medium heat and cook for 30 minutes.
  3. Heat the Worcestershire Sauce and 1 Tbsp Vegetable Oil in a large skillet or frying pan at medium-high heat (6 on my stove).
  4. Cut up the peppers and onions an place in the pan.
  5. Heat the butter and remaining 1 Tbsp Vegetable Oil in an all-metal skillet or frying pan at medium-high heat (this is important since this pan will end up in the oven. Please don't use one with a plastic handle, you'll hate yourself later).
  6. Rub the ribeyes with the coffee grounds and brown both sides in the all-metal frying pan for 1 minute per side.
  7. After browning both sides, place the pan in the oven for 15 minutes.
  8. Remove steaks from oven, slice into strips and serve with veggies over rice.
Notes
  1. An alternate method of cooking the steak is to add to the stir fry after the veggies start to soften. This is the method I typically use when cooking only one ribeye since I can fit everything into one pan.
