Growing up we always had the pre-made store bought version of Pimento Cheese to put on our Pimento Cheese sandwiches, but a few years ago I started to make it from scratch every once in a while. This is the best recipe I have come up with and the pepper jack cheese gives it a nice kick.
As a kid I never realized that this had to have been my mom’s secret way of getting us to eat our vegetables. This dish was always a requested item at the many family reunions and covered dish dinners we attended growing up. I’m not sure if it was the bacon or the dressing that got me hooked, but I still enjoy this recipe.
